My ex-husband used to love zucchini. So, over the course of our marriage, I found myself in the kitchen makin’ everything from eggs and zucchini quiche, to fried zucchini, sautéed zucchini, and even curried zucchini soup. You name it! if it was made with zucchini, he ate it. But actually, his favorite was this savory zucchini cheese bread. Yes, siree! Give that man a big ol’ slice of this here bread, along with a cup of his Greek coffee, and he felt like a Zeus! But, don’t tell my ex-mother-in-law how much he liked it…’cause she sure wouldn’t like the idea of me bakin’ up somethin’ that he liked better than hers!
Zucchini Cheese Bread

INGREDIENTS
1 cup whole wheat flour
1 cup all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme (chopped)
2 cups zucchini (grated)
1½ cups white cheddar cheese (grated)
¼ cup chopped scallions or shallots
¾ cup buttermilk
¼ cup olive oil
2 large eggs
INSTRUCTIONS
Preheat your oven to 350° F.
In a bowl, mix together the flours, baking soda, baking powder, and salt and pepper and thyme. Now, add in the zucchini, cheese, and scallions and toss to coat.
In another bowl, whisk together the buttermilk and the eggs.
Add to the flour mixture to the egg mixture and stir until all combined.
Pour that batter into your greased loaf pan and bake for 55-60 minutes, or until a wooden toothpick can be inserted into the center of the bread loaf and it comes out clean.
Let it cool, then remove it from the loaf pan and serve that tasty stuff up! YUM!
