Southern-Fried Pork Loin Chops with Gravy

INGREDIENTS

4 pork loin chops

1 ½ cups unbleached flour

1/3 cup vegetable oil (or enough to cover the bottom of a 12-inch skillet)

2 tablespoons butter (salted or unsalted)

2 teaspoons kosher salt

2 teaspoons freshly ground black pepper

2 tablespoons garlic powder (or granulated garlic)

1 teaspoon cayenne pepper


For Gravy:

½ cup chicken broth

2 tablespoons butter

2 tablespoons unbleached flour

1/3 cup heavy whipping cream (or half & half)

1/3 cup low-fat milk

1 teaspoon each of salt, black pepper, garlic powder

INSTRUCTIONS

1.    Salt and pepper, garlic powder, and cayenne pepper the pork loin chops on both sides.


2.    Get out a pan and add the flour to the pan. Now, generously dredge your seasoned pork chops in the flour on both sides and set aside.


3.    Get out your 12-inch skillet and heat the oil and butter over medium-high heat until the butter is all frothy. Then, add the floured and seasoned pork chops to the pan and fry for 5 minutes on each side. Then transfer the chops to a clean pan and place in a warmed oven (about 200ᵒ) while we make the gravy.


4.    For the Gravy.  Using the same pan that you fried the pork chops in, get a spoon and remove only any really burnt bits from the pan and discard them, leaving any browned bits and chunks left in the remaining oil in the pan


5.    Over the same medium-high heat, add the chicken broth and use a wooden spoon to scrape up the browned bits you had left in the pan and stir to mix with the broth. Then, add the 2 tablespoons of butter. Continue stirring until blended and then add the 2 tablespoons of flour and whisk until it thickens. As soon as it thickens add the heavy whipping cream and then the low-fat milk, whisking constantly to thoroughly blend the ingredients and let the flour cook off. If it gets too gloppy, you can add a little more chicken broth, whipping cream, and another tablespoon of butter. You want the consistency to be creamy…thick and creamy. Now, season with the salt, pepper, and garlic powder, continuously whisking until blended. Taste the gravy to see if it needs more of any of the seasoning. (maybe a pinch of cayenne, too? It’s up to you. You know what tastes good!


6.    Now, remove your pork loin chops from the warmed oven, plate them, and generously pour some gravy over your chops


7.    Enjoy!!


NOTE: Serve with some of Grandmama’s Country Cornbread,  mashed potatoes or rice with gravy, some green beans or field peas, and maybe try some of Nene’s Yellow Squash which is on my website! Dee-lish-us! The perfect Southern Sunday Supper!
