Simple Asparagus

Boiled Asparagus

I gotta tell you, down deep I’m a purist. For instance, when I eat asparagus I want it to taste like asparagus. Okay, maybe adding just a few tiny shavings of grated Parmesan cheese, salt and pepper and lemon. But, that’s it! I want it to crunch when I eat it. To me, nuthin’ is better than barely cooked, bright green, fresh asparagus! So, by request from several of my own dinner guests, here’s a simple, quick and easy way to make yummy and delicious healthy fresh asparagus.

INGREDIENTS

One bunch fresh asparagus

½ freshly squeezed lemon

1 tablespoon butter

2 tablespoons extra virgin olive oil.

Salt and freshly ground pepper (to taste)

Shavings of Parmesan cheese (optional)

INSTRUCTIONS

  1. Get yourself a pan with a lid. The pan should be large enough that the asparagus should be able to lay down flatly in it with ease.

  2. Fill the pan with salted water about 1 inch up the sides of the pan.

  3. Cut the hard ends off the asparagus. About an inch usually does it.

  4. Toss that asparagus into the salted water.

  5. Put the lid on the pan and turn the heat on high.

  6. As soon as you see the steam coming out the side of the lid, it is boiling, (about 3 minutes) take it off the heat and pour the water off.

  7. The asparagus will still be bright green and still a bit crunchy.

  8. Add the olive oil and the butter into the pan, which will melt immediately, and toss it around to coat the asparagus.

  9. Add the fresh lemon juice and toss once more.

  10. Sprinkle with the salt and ground pepper.

  11. Serve immediately. It's sooo good and sooo good for you, too!
