Oven-Roasted Fresh Carrots With Honey, Orange & Fresh Ginger

INGREDIENTS

2 bunches of fresh carrots (cut leafy stems leaving 1-2 inches/peeled)

4 fresh oranges

1 tablespoon honey (or pure maple syrup)

2 tablespoons butter

1 tablespoons olive oil

1 tablespoon fresh ginger (grated)

1 teaspoon salt

½ teaspoon cayenne pepper

INSTRUCTIONS

  1. Preheat your oven to 400°.

  2. Cut the leafy stems off the fresh carrots leaving about 1-2 inches. Peel the carrots. All the carrots should pretty much be the same size. If some carrots are really fat, then you can cut them lengthwise in half to match up the size of the other carrots.

  3. Git out your grater or zester. Zest one of the oranges, place in a little bowl, and then juice that orange.

  4. Grate your fresh ginger and add that to the orange zest.

  5. Take one more orange and juice that orange also. You should have about ⅓-1/2 cup of juice.

  6. Thinly slice the remaining two oranges and then halve those orange slices.

  7. Git out a mixing bowl.

  8. Add the orange juice, orange zest, grated ginger, honey, salt and cayenne pepper to the bowl and give it a stir.

  9. Now, git out a little pan or pot and heat up the butter and olive oil over a medium heat until it’s all frothy.

  10. Add the orange juice-ginger mixture to the butter-olive oil and stir it around for a minute to incorporate all the ingredients. Once blended, turn off the burner.

  11. Git out a roasting pan. Grease the pan with some olive oil if your pan is not a non-stick or line with foil.)

  12. Arrange your fresh carrots in the pan. Make sure they’re not too crowded in the pan so they can roast evenly. Pour the orange-butter mixture from the pot over the carrots and toss well. Place the orange slices on top of the carrots.

  13. Bake the carrots in your 400° oven for 45-50 minutes until carrots are lightly browned and tender.

  14. (You’re gonna want to check the carrots after 20 minutes and gently turn them so they can cook on the other side. At that time you can also flip the orange slices. Note: these carrots will not be mushy, but should have a little crispiness to them once cooked.)

  15. When browned and tender, remove the carrots from the oven and serve warm. Is that easy or what? YUM!!!
