You know what?? I think people have forgotten just how good a piece of fluffy, white angel food cake can taste! When it’s homemade , it don’t taste nuthin’ like that FAKE, cardboard tastin’ stuff they sell at the grocery store! No sir-ee! If you want a REAL piece of heavenly goodness, then make you and your family some of my Mama’s Angel Food Cake! Why? ‘Cause it is devilishly GOOD! YUM!
Mama’s Devilishly Good Angel Food Cake

INGREDIENTS
9 egg whites
1 teaspoon cream of tartar
1 teaspoon vanilla extract
½ teaspoon almond extract
11/4 cups cake flour
¼ teaspoon salt
11/2 cups sugar
INSTRUCTIONS
Separate your egg yolks from the egg whites and place the whites in a large mixing bowl. (Save them egg yolks for the next day’s country ham, red-eye gravy and eggs breakfast.)
Now, beat them egg whites with a whisk or a hand mixer until they form some stiff peaks.
Next, add the cream of tartar and vanilla and almond extract and fold into the stiff egg whites ‘til blended.
Git yourself 2 big bowls. Sift together the flour, sugar and salt 5 times! That’s why you need the 2 bowls so’s you can sift back and forth the 5 times.
Gently, add the sifted dry ingredients (beating in just a little at a time) into the egg whites mixture until combined.
Then, (again gently) spoon the whole mixture into an UN- greased tube pan.
When it’s all in the tube pan, you take a dull knife and cut through the batter with the knife. This’ll get rid of any excess air pockets in your batter.
Place your cake pan with batter on the bottom rack of your oven. Turn the oven onto 325° and bake for 35-40 minutes until golden brown on top. I stick a wooden skewer into the middle of the cake and if it comes out dry, it’s done.
When it’s done, take it out of the oven and let it cool upside down on a coolin’ rack for an hour.
Once cooled, run a knife around the center and side of the tube pan and gently push inverted cake out into a plate from the removable bottom if it doesn’t slide out on its own. Just place a plate on the inverted cake bottom and turn right side up.
Now, cut yourself a piece of that fluffy, white angel food cake and have yourself a little piece of heaven! YUM!
