Easy Cheesy Tex-Mex Taco Pie

When I’ve got a bunch of folks stopping by, I wanna chat more than cook! So, I make something simple like this here Tex-Mex Taco Pie. it’s a whole supper-in-one-skillet. It’s quick and easy! Serve it up with a little guacamole and some chips and a frosty glass of Negra Modelo…and honey, you got yerself a little fiesta for the mouth! Ole!!



Easy Cheesy Tex-Mex Taco Pie

INGREDIENTS


5 or 6 whole corn tortillas

2 tablespoons olive oil

1 small onion (chopped fine)

1 fresh jalapeno pepper (seeded and chopped)

1 can diced tomatoes (I like Rotel Tomatoes)

½ cup black beans (drained and rinsed)

½ cup corn kernels (fresh or frozen)

1 tablespoon taco seasoning

1 teaspoon ground cumin

½ teaspoon kosher salt

½ teaspoon ground black pepper

3 eggs (beaten)

2 tablespoon water

2 oz. cream cheese

½ teaspoon chili powder

1 cup Mexican-Style cheese blend (or grated cheddar cheese mixed with queso blanco)

Chopped Romaine lettuce w/ chopped fresh tomatoes (for serving topping-optional)

INSTRUCTIONS

  1. Preheat your oven to 375°.

  2. Grease your cast iron skillet with 1 tablespoon of the olive oil and line it with whole corn tortillas.

  3. In another skillet, on a medium heat, brown your chopped onion.

  4. Once the onion is translucent, add the jalapeno peppers and stir it for a minute.

  5. Next, add the ground beef and brown it.

  6. Once the beef is beginning to brown, add the tomatoes, black beans, corn, taco seasoning, cumin, salt and pepper and mix well.

  7. When it’s all mixed then turn off the heat under skillet with beef mixture.

  8. Now, stick your cast iron skillet lined with the corn tortillas in the oven for a minute - just to get them warmed up. Then, take the tortilla skillet out and set it aside.

  9. Next, get out a big mixing bowl and add the eggs,water,cream cheese and chili powder into the bowl. Whisk it up ‘til mixed well and set that aside.

  10. Now, get your cast iron skillet with the tortillas in it and top the tortillas with the ground beef mixture. Spread it out evenly.

  11. Now, top the meat with the cream cheese mixture and spread it out evenly over the meat.

  12. Lastly, top all that with the grated cheddar-queso or Mexican cheese mix.

  13. Bake at 375° for 15 minutes and the cheese is melted just browning and bubbly.

  14. Then, cut a hefty slice of the delicious stuff, top with some crunchy chopped Romaine lettuce and chopped cherry tomatoes and serve immediately. Now, you got yourself some tasty, easy, cheesy taco pie!! YUM!
