Bacon-Wrapped Medjool Dates Stuffed with Goat Cheese

INGREDIENTS
16 Medjool Dates (pitted)
4 ounces goat cheese
⅓ cup dried cherries
8 slices of thinly-sliced bacon (cut in half)
INSTRUCTIONS
Preheat your oven to 375°.
If you didn’t buy already pitted dates, then git yourself a knife and cut a slit in the side of each date and remove the pit. (If the dates are already pitted there should already be a slit in each date.)
Git out a rimmed bakin’ sheet and line it with parchment paper.
Now, add the goat cheese into a small mixing bowl. Roughly chop up your dried cherries and mix them into the goat cheese.
Next, fill or stuff each date with a small spoonful of the goat cheese mixture and mash together to close. Lastly, wrap each stuffed Medjool date with a half-slice of the bacon and secure with a toothpick. You don’t want the bacon to overlap too much so that it will cook evenly.
Evenly distribute the bacon-wrapped stuffed dates on the parchment- papered baking pan. Bake for 10 minutes. Then, after the 10 minutes is up, take the pan of dates out of the oven and turn each date onto the other side and then place them back in the oven, so that they can brown evenly, for another 7-8 minutes.
Once nicely browned, remove them from the oven, and let them drain for a few minutes on some paper towel before serving them while still warm. YUM! The perfect sweet and savory appetizer!
