Avocado Fun Appetizers

INGREDIENTS
5 hard-boiled eggs (peeled, halved, and egg yolk removed to mixing bowl)
1 large avocado (mashed) SAVE THE SHELLS!
1 tablespoon red onion (grated)
1 teaspoon jalapeño pepper (finely chopped)
1 tablespoon cilantro (finely chopped)
½ teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
1 tablespoon freshly squeezed lemon juice
For Decoration:
2 slices bacon (fried and crumbled) optional
2 radishes (thinly sliced)
1 teaspoon capers
1 zucchini (sliced very thinly, lengthwise)
2 green onions
Smoked salmon (thinly sliced)
INSTRUCTIONS
Place your halved egg white shells on a platter.
Place all the ingredients (with the exception of those for Decoration) in a mixing bowl and mix until you have a nice and creamy mixture. (If you like it more creamy, you can add and mix in a teaspoon of sour cream or plain yogurt.)
Now pipe the mixture into the egg shells and decorate however you like. You can sprinkle the top of the stuffed eggs with crumbled bacon or top with radishes and capers. It’s up to you. You can also fill the empty avocado shells with flowers made of green onions (in center) surrounded by smoked salmon and wrapped in thinly sliced zucchini. You’re the boss! Have some avocado fun!
